This is a roundup of tasty low-carb vegan recipes that you’ll like whether you follow a vegan, low-carb or a regular omnivore diet. This list includes low-carb vegan dinner ideas, some low-carb vegan snacks and low carb vegan lunch recipes.

Why This List?

So if you’re a weirdo like me, you might have wondered: Is it possible to do a vegan keto diet? With of course no intention of ever doing such thing, because you’re a little procrastinator.

But I do understand there are people who do follow a keto or low carb diet, and people who follow a vegan diet for different reasons – weight loss, health benefits or in the case of a vegan lifestyle – ethical and environmental reasons. There are plenty of testimonials out there that both of these diets can be very nourishing and healthy.

The fact is however vegan diets are usually rich in carbs and low-carb diets are usually based around consuming a large amount of animal products. So for those vegans who want to eat a low carb meal every once in a while, or those low-carb eaters (<-????) who want to lower their meat consumption, I decided to round up some healthy recipes that are both: low-carb and vegan.

Let’s start with a short grocery list.


Low-Carb Vegan Foods

There are plenty of plants you can eat even if you’re doing a low-carb diet. Remember that you don’t need to focus on the total amount of carbs, you want to keep an eye on the net carbs that you’re eating and you don’t need to go to extremes to be healthy. This list of high-fiber low-carb foods might also be helpful.

Vegetables. Radishes, broccoli, cucumbers, spinach, kale, arugula, artichokes, Brussels sprouts, snap beans, bell peppers, cauliflower, zucchini, okra, celery, asparagus, cabbage, Swiss chard, bok choy and feel free to finish the list.

Some Fruit. I’m not just talking about avocado here. Shocking!!! I know avocado is a fruit…Come on!!! Who’s the botanist? Here we’re also talking about berries like blackberries, raspberries, strawberries, lemons, tomatoes, eggplant, avocado. That’s pretty much it.

Nuts. Almonds, walnuts, Brazil nuts, not too many cashews (apparently they’re pure sugar for some), macadamia nuts, pecans and peanuts (which are a legume, I know, forgive me for not making a separate paragraph). You can also drink or eat their milks and butters.

Seeds. Chia seeds, sesame seeds, pumpkin seeds, hemp seeds, flaxseeds.

Tofu. Haven’t shared anything about it, but I tried tofu again and did not hate it. It basically tastes like whatever you make it taste. My choice always and forever will be garlic. A huge ball of garlic. I’m so fresh and so clean.

Mushrooms. All kinds of mushrooms, some might poison you, some will boost your immune system, it’s like Russian roulette. Get someone to collect them who knows their stuff.

Oils. Like olive oil and coconut oil, what else would you need really?

Herbs & Spices. Garlic, parsley, basil (thank goodness!), rosemary, mint, black pepper, turmeric – anything your heart desires here.

Coconut & coconut milk. Happy now?

Cocoa. I think you are….


Low-Carb Vegan Recipes

Most of these plant-based low-carb recipes are great for lunch or dinner and I included some drinks, snacks and desserts at the end.

Asian-Inspired Lettuce Wraps. These aren’t the typical lettuce wraps as I made them almost raw using different nuts, seeds, vegetables, herbs spices, and tamari. But they’re really good and you only need a food processor to make them.

Crispy Sesame Tofu With Zucchini Noodles. Now, this is something past-me would never even consider eating. Since becoming friends with tofu, I think this looks so amazingly delicious and definitely picture myself making it soon, people seem to really like it as well. To make it low-carb, skip the maple syrup.

Raw Vegan Collard Wrap Recipe. There are no words to describe how much I appreciate the look of these wraps…Trust me I tried to make wraps using different greens, they don’t compare. These raw vegan wraps look and sound amazing.

Vegan Egg Roll In A Bowl. Take out the wrapping of an egg roll and you end up with a spicy and delicious healthy vegan dinner. You’ll love this tofu recipe, it’s quick, easy and perfect for a weeknight dinner.

Harissa Portobello Mushroom “Tacos”. What did I tell you about those mushrooms? Be careful with them. But if you do decide to have them, you can make these gluten-free vegan lettuce tacos in 30 minutes.

Avocado Cucumber Sesame Salad Recipe. Seriously this salad was my dinner that one time and I did not cry that night. It was so damn good. Light, fresh, but also filling and satisfying. You need only few ingredients and some good peeling skills, but it’s really good.

Hemp Seed Tabouli.Ohhh, that’s interesting! It’s a refreshing salad using hemp seeds instead of bulgur which makes it low-carb, vegan and gluten-free.

Tofu Lettuce Wraps. These are light, pretty easy, very similar to the egg roll recipe and really delicious.

Mushroom Cauliflower Rice. You can make this one-skillet low-carb vegan dinner in around 20 minutes.

Buffalo Cauliflower Bites. Yes, more cauliflower! This recipe is a vegan, paleo and low carb alternative to chicken wings.

Zucchini Pasta With Avocado Pesto. This has two of my favorite things: avocado and garlic, it looks so creamy, I know I’ll love it.

Tomato, Avocado, Basil and Arugula Salad. So this salad is super fresh, full of flavor and very easy to make. It’s a perfect summer dish and a very popular recipe on this blog.

Curried Tofu Scramble. This tofu recipe is filled with vegetables, takes around 25 minutes and is good for breakfast, lunch or dinner.

Spicy Grilled Eggplant With Red Pepper, Parsley And Mint. So this recipe combines a few of my favorite things: eggplant, mint and garlic. I think it’s a winner.

Low-Carb Vegan Dinner Bowl. There are a ton of good things in this dinner bowl: cabbage rice, tofu, avocado, broccoli, kale and an amazing almond butter sauce!

Low-Carb Hummus. Did you know you could use zucchini for purposes other than making zoodles? Well, when you grill them or stir-fry them you can also turn them into a delicious low-carb hummus. This recipe is really good as a snack or as a side.

Spicy Vegan Cream Cheese. I get comments all the time, where the cream cheese is in this recipe and surprise: nowhere! This spicy vegan cream cheese is made with sunflower seeds, roasted red peppers and it’s one of my favorite sauce/dip recipes.

Spicy Avocado Dip. This spicy avocado sauce is fresh, creamy, takes 5 minutes and can upgrade any homemade meal.

Keto Peanut Butter Truffles. We’re talking peanut butter dipped in melted chocolate, no baking involved, mkay?

Almond Butter Keto Coffee. My sister did the keto diet for I think 10 days and started making this keto coffee that has little to do with MCT oil, butter and whatever people put in their coffees this days. This one’s made with almond butter, coconut oil and cinnamon. It’s so delicious!
