Great way to use summer produce :) a hit even with ppl who don’t like eggplant!

Glen N. 3 years ago

I liked it, but wasn't as good as an eggplant parmesan or a pizza.

Anastasiia Liubimtseva 3 years ago

It turned delicious and healthy as I like it to be. You can add other types of cheese, in case if don’t have mozzarella. For eggplant instead of paper towel method, I put them into the water and added salt there and let thin sit for 15-20 min. Also, if diced tomatoes are not enough for you, you can add tomato Italian sauce for better taste. That’s about it, great recipe, easy to follow. Thank you.

it was ok for a healthy snack

Fantastic grilled the dish too hot to crank up the oven. I did not have salad so I grilled some bok choy. And had some hummus great combination.. I used a copper grill mat

It was good, but next time will add a green salad, it was barely enough for dinner for two.

Turned out really delicious. I’m trying to get my husband to eat less meat so I made these for dinner. We both really loved them.

Excellent! Simple and delicious!

It's a tasty alternative but not quite actual pizza. I will probably only make occasionally as it fairly time consuming.

Djokernole 5 years ago

Couldn’t taste the eggplant

Sheilah Burnham 5 years ago

It turned out great for the most part It just needs a tiny tweak for my family's taste buds. We'll be trying it again. ;)

Great. Though at the last! We found we didn't have the eggplant we thought we had. So improvised with sliced kumera and that worked out fine,

My girlfriend and I thoroughly enjoyed this. I had a smaller eggplant which was enough for us but next time I’m getting the larger one for leftovers

Chelsea B. 6 years ago

Delicious! We added panko bread crumbs on top of some of them before we broiled and it made it even better! We would have used italian bread crumbs if we had them.

Angelina Barone 6 years ago

Amazing. I would definitely make again.

FAQs

How long does eggplant take to cook? ›

Depending on variety and size, and how they are cut, eggplants take 15 to 25 minutes to fully cook. Undercook them and you'll be left with a bitter-tasting veggie that has the texture of a cotton ball, says Norton. "Most recipes can accurately predict how much time it will take for eggplants to fully cook.

How to soften eggplant? ›

A useful tip to prevent sogginess and greasiness is to salt sliced or diced eggplant and let it sit for an hour. This helps to draw out moisture. Next, rinse and drain any liquid from the sliced eggplant, then pat dry before cooking. This will further soften the eggplant preventing it from soaking up fat while cooking.

How do you know when eggplant is cooked enough? ›

When it's cooked, “it should turn fully tender, all the flesh should be somewhat custardy. If you have to, hammer it a bit, knock it around, let it start to collapse.” When you're roasting eggplant, like in YuChen's recipe, “make sure you give them enough space so they can cook evenly,” she says.

What is the secret to cooking eggplant? ›

The best eggplant is caramelized and crispy on the outside and melt-in-your-mouth tender on the inside. This is achieved by giving the cubes or slices enough room to brown while they cook. If you overcrowd them in the pan or baking sheet, they'll steam instead of brown and you'll never get that caramelization.

Why do we need to soak cut eggplant in water? ›

Many recipes call for salting and rinsing eggplant before cooking it to draw out its bitterness. Brining can be used instead and has the added advantage of helping the eggplant keep its shape when it's cooked, whether your recipe calls for baking, frying, or grilling.

How do you keep eggplant parm from getting soggy? ›

You want to do the most to protect your eggplant. Salting it to remove moisture before it starts cooking is very important (and letting it squeeze out excess moisture beneath the weight of a heavy pot for an hour is crucial, too). Then cut it lengthwise instead of across into medallions.

Is it necessary to peel eggplant for eggplant Parmesan? ›

The peel of an eggplant is completely edible. However, as the eggplant grows bigger and matures, the peel may become tough and bitter. People often prefer to peel larger eggplants because of this, but smaller eggplants do just fine unpeeled. It ends up being a matter of personal preference.

Why is eggplant hard after cooking? ›

You mentioned that once they turned out tough and chewy: then they were not cooked fully through. Vegetables are not like meat, which turn rubbery when overcooked. They turn soft rather. Watch out for the opposite as well: Eggplants when cooked for a long time may turn mushy.

Why do you soak eggplant in vinegar? ›

Why do you soak eggplant in water and vinegar? Soaking eggplant in water and vinegar helps remove some of the vegetable's natural bitterness. This step also helps preserve some of the skin's color so it stays a vibrant purple even after cooking.

Can you over cook eggplant? ›

The thing about cooking eggplant is that it's easy to get wrong. Underdo it, and it's spongy and tough. Overdo it, and it turns to mush. But get it just right, and eggplant is one of the most flavorful vegetables out there.

How long does eggplant take to get soft? ›

Roasted Eggplant

For this cooking method, you'll want to avoid cutting your eggplant first. Simply poke several holes all over your eggplant and then place it on a baking tray in the oven. After 45 minutes to an hour, your baked eggplant will develop a soft, buttery texture.

How long does it take eggplant to get tender? ›

Cooking it at a high temperature (425 F / 218 C) for enough time (25-30 minutes) to give it a browned exterior and tender interior. Just look at those cubed purple beauties!
